Chocolate Chia Pudding

I wanted a simple chocolate pudding – no stove top required and quick setting.

I opted to use the recipe included in Plant-Powered Families, with some modifications.

Ingredients

1 1/2 cup pitted dates
1/2 cup – 3/4 cup black chia seeds
1/2 cup unsweetened coconut flakes
4 heaping Tbsp cocoa powder
1/2 tsp coarse or sea salt
3 cups unsweetened plain non-dairy milk (I used almond)
1 1/2 tsp vanilla extract

Directions

Add all ingredients to a blender and mix for at least 1 minute, until chia seeds are mostly ground up.

Transfer to a bowl or individual ramekins (I love to use smaller 8 oz mason jars with plastic lids) and refrigerate for at least 30 mins to set.

Makes about 5 servings
